So here is my meal plan for today:
- Breakfast: eggs and fruit
- AM snack: olives and tomatoes
- Lunch: meat and green beans with vinegar
- PM Snack: yogurt and fruit
- Dinner: salad
Well, I didn't wake up very hungry, so I waited until 11am to eat breakfast. I had two eggs, a banana, one Christmas cookie (doggone it!!!) and some tea. I am eating lunch now, and it's olives, sardines, and green beans with vinegar.
Remember how I told you that I like sardines? Well, I had never tried them, and to be honest they creep me out a little bit. However, I started eating them because they're supposed to be good for you (right?) and they are so cheap, quick and easy. I started out with the cans packed in tomato sauce, but today I tried lemon and sunflower oil, and they are still pretty good. Do you like sardines? Have any good recipes ideas?
I also made a dish that one of my roommates here in Spain has made a few times: green beans with vinegar. You dice up a half of an onion and put it in a pan with a bit of olive oil. Then, you cut up your green beans (the kind I use here are "flat" green beans - they're pretty good and look like really long snow peas!) and add them to the pan. I let them cook for about 15 minutes, adding a bit of water when they would start to stick to the pan. Then add salt and pepper to your taste. When they are tender enough, add about 1-2 Tbsp of balsamic vinegar and then remove to a plate. They have a bit of a tang, are very healthy and low calorie, and contain vinegar (which helps digestion and weight loss!) Here's a picture of my plate:
