Last night, I was hungry. I didn't have time to go grocery shopping, and I didn't want to eat out. I go to the pantry, and I pull out pasta, tomato sauce, and canned tuna.
Gee whiz.
But, it made a pretty awesome quick meal with some magic.
I made a serving of the pasta. While it was cooking, I put 1/2 chopped onion (I keep them in my freezer for next time when I don't use a whole onion), some garlic, oregano, a can of tuna, 3 kalamata olives, and a squeeze of lemon juice in a sauce pan. Then I poured some no-added-sugar tomato sauce on top and heated it all up.
I topped the pasta with the tuna mixture, threw some feta cheese on top, and called it a quick dinner. Guess what - it was pretty awesome. :)
Just goes to show you that cooking, like life (pause for dramatic effect), can still be good and healthy even without a plan.
