Turkey Meatball Soup





This turkey meatball soup was pretty easy to cook up, and it was delicious! The spice in the meatballs really made the dish, and all the free veggies kept my tummy full. Enjoy!





Turkey Meatball Soup
Serves: 4

Preparation Time: 15 minutes; Cook Time: 45 minutes

Ingredients:

For the meatballs:
  • 8 oz 99% fat free ground turkey
  • 1 egg, beaten (I know that I have two eggs in the picture below, but I only used half of the eggs; 2 eggs would make the meatballs too soggy)
  • 1/4 c bread crumbs
  • 1/4 c chili sauce (I used Cholula, and it made one spicy meatball!)
  • 1 tsp Worcestershire sauce
  • 1/4 c parmesan cheese
  • 1 tsp fennel seeds
  • 1 tsp dried oregano

For the soup:
  • 32 oz low-sodium chicken broth
  • 1 tbsp oil
  • 1 small onion, cut in half and sliced
  • 2 garlic cloves, peeled and crushed
  • 2 carrots, cut into small sticks (or more - go crazy with the veggies!)
  • 1/4 lb. fresh green beans, with ends removed and cut into 1" pieces
  • 7 oz diced tomatoes in juice (about half a regular can)
  • 1 tsp dried oregano
  • 1/2 tsp fennel seeds
  • salt and pepper, to taste
To prepare:
Preheat oven to 350˚
In a large bowl, combine all meatball ingredients and mix well with your fingers.
Roll into meatballs (about 1/2 tsp per meatball will make around 20 meatballs, or 5 per serving) and place on a cookie sheet prepared with parchment paper (or you can use aluminum foil and spray with cooking spray).


Bake for 25 minutes, or until golden.

While meatballs are cooking, heat oil in a large pot over medium heat.
Add onion and garlic and allow to cook for 5 minutes, or until soft.
Add remaining ingredients and bring to a boil.
Reduce heat to low and simmer until meatballs come out of the oven.



Pat the meatballs with several layers of paper towels (push down on them quickly so that you don't burn your hands). Add to soup.
Cover and simmer for 10-15 minutes.

Serve immediately.

I calculated the PP value and then I added the "free" ingredients to come up with the remaining nutritional values.
